What good is having a fire pit at Observatory Living in Wright without a great barbeque recipe?

This quick and easy lemon & herb grilled chicken is perfect for barbecues or just a tasty, easy dinner that is sure to impress.

Combine the oil, white wine, lemon juice, parsley, rosemary and oregano in a large bowl. Season with pepper. Add the chicken and toss to coat. Cover with plastic wrap and place in the fridge for 4 hours or overnight to marinate.

Preheat your fire pit to high. Season chicken with salt and cook for six minutes each side or until cooked through. Add the lemon, cut-side down, in the last two minutes of cooking and cook until charred. Serve the chicken with the lemon and rocket leaves.
